Hi there – I’m going to make your caesar salad dressing and was wondering (after it rests for a day), how long do you think it will keep in the fridge? It might take me a few days to use it all up and I worry about keeping it too long since it has a raw egg.

Kelly – It’ll be fine. I usually keep mine in the fridge for 4 days or so. I’ve never had a problem. The thing with raw eggs, is … you’ll be able to smell if they’ve gone horrible.

Karen! Tell me more about the polenta. I have a tube/log but I haven’t tried to use it because I’m not so sure about the porridgy first go of it. I know I like the solid version. HELP!
